Cooking 4 You: Churrasco Steak

MIAMI (CBS4) ― Grilled Sweet Orange & Basil Mojo Churrasco

Ingredients
* 2-1/2 LB Churrasco or skirt steaks
* 2-cups La Lechonera Mojo marinade
* 1-Navel Orange (halved)
* 2-packs of fresh Basil
* 1-Large red onion peeled and sliced about ½ inch thick
* ½ cup olive oil
* 1-cup of triple sec (orange Liqueur)

Instructions:
With a fork puncture steaks on both sides thoroughly. Chop two packages of basil in small pieces and mix into La Lechonera Mojo marinade. Place steaks and marinade in a plastic bag making sure meat is completely covered in the marinade. Let stand for 1-3 hours flipping meat every hour. For best results add ½ cup of olive oil into the Mojo mix and let in marinade overnight. Chop up ½ pack of the remaining basil and mix it into the triple sec and let it blend for the same length of time as the meat (again overnight is best). Cut the orange into ¼ and then slice the rest into smaller slices (about 1/8ths) for garnish.


Take the steak out of the plastic bag and rinse the excess Mojo off orange juice from the ¼ of reserved naval orange. Using a pastry brush apply triple sec to both sides of steak. Apply a layer of olive oil to both sides of the sliced onions. On a medium hot grill place the onions for about 3-minutes then flip them and add the steaks to the grill. Cook for 3-minutes per side for rare and 5-minutes for medium rare (based on a 1" thickness). While cooking, constantly baste with triple sec. Add one last layer of triple sec just before you remove the steaks from the grill. Garnish a platter with remaining basil, slices of orange and the cooked onions. Place the steaks in the center of the platter and serve.
