Cooking 4 You: Warm Tenderloin and Arugula Salad

MIAMI (CBS4) ―
Warm Tenderloin and Arugula Salad
Serves 4


Ingredients:

  • 16 oz Beef Tenderloin cut into 1 inch pieces or you can use tenderloin tips
  • 8 oz Arugula
  • 4 oz Goat Cheese (Crumbled)
  • 2 Roasted Red Peppers (Diced)
  • Aged Balsamic Vinegar or a Balsamic Glaze
  • Olive oil
  • Salt and Pepper

Directions:

  • Season the beef with salt and pepper to taste.
  • Heat a sauté pan over medium high heat.
  • Coat the bottom with olive oil and brown the beef to your desired doneness. Place the arugula on a platter sprinkle with the diced roasted red pepper and goat cheese.
  • When the beef is done place on top of the salad. This will wilt the arugula a bit and melt some of the cheese.
  • To finish, drizzle the balsamic vinegar over the platter and serve.
