Gridiron Griller: Brick Chicken

MIAMI (CBS4) ― This week, the Gridiron Griller John Offerdahl has a great recipe that has roots in Florence Italy. Brick Chicken was created to get an evenly cooked chicken breast with great grill marks.

PREP

• 4 skinless boneless chicken breast halves
• 2 T. olive oil
• 1/2 cup fresh lemon juice
• 1 T. minced garlic
• 1 tsp. kosher salt
• 1 tsp. freshly ground black pepper
• 4 bricks wrapped in aluminum foil (ensures even grilling & great embossed grill marks!)

Rinse breasts under cold running water, drain and blot dry with paper towels. Pound breasts between wax paper with a brick until thick ends are flattened to the same thickness (about 3/4"). Sprinkle the breasts on both sides with salt, cracked pepper and minced garlic and arrange them in a non-reactive baking dish. Pour the lemon juice, oil and wine over the chicken and marinate in the refrigerator, covered for 30 min. to 1 hour.

Sauce

• 1 T. minced garlic
• 2 T. butter
• 2 T. olive oil
• 1/2 cup white wine
• 1/4 cup fresh lemon juice
• 2 T. capers
• 1 tsp. kosher salt
• 1 tsp. freshly ground black pepper
• 2 T. chopped fresh flat-leaf parsley
• grated parmesan cheese to top
• 1 lb. angel hair pasta

In a small saucepan, melt butter and add olive oil. Saute garlic for 1 min. and add wine, lemon juice, capers and parsley. Season with salt and pepper and set aside.
 
LETS GRILL!

Preheat the grill to high. Brush grill grates with olive oil and arrange the breasts on the hot grates facing in the same direction at a 45 degree angle to the bars of the grate. Place a brick on top of each breast and cook for 6 to 7 min. on each side. Rotate the breasts 90 degrees after 3 min. so it creates a criss-cross mark on each. When the chicken is firm and cooked, transfer it to a platter. Arrange chicken breasts on a bed of pasta and pour sauce over chicken. Sprinkle with grated parmesan cheese and parsley.
